I’m Chef Nité Marquez, Culinary Arts Instructor and Content Creator from Taos, New Mexico.

My goal is to preserve and share the flavors & traditions of New Mexican Cuisine. New Mexican food is a world of it’s own. From red or green chile to blue corn and chicos - all included in the recipes passed down in our families.

Through my recipes and videos I aim to keep our culture alive, making traditional food and inspiring the next generation to connect with their roots. My philosophy is simple: don’t trust your oven or your stove- trust your heart. No two hands will ever make the same bread or pot of soup. If a recipe calls for something you don’t like or have, leave it out.

Everything I’ve learned started in a small kitchen, beside my mother, with simple ingredients and a lot of love. I carry that with me in every dish I make and every recipe I share. If I can inspire even one person to cook for the first time, to remember those recipes passed down from their mothers and grandmothers, or even to teach someone else: then I’ve done what I set out to do.
